Gajjar Halwa Ice Cream Snaps recipe by Chef Vikas Seth, Chef & Culinary Director, Embassy Leisure

Prep Time: 1 hr, Freezing Time: 4-6 hrs
For Gajjar Halwa
Ingredients:
– 500g grated carrots (preferably red)
– 240ml milk
– 200g khoya
– 75g sugar
– 2 tbsp ghee
– ¼ tsp cardamom powder
– 4 tbsp chopped nuts (almonds, cashews, pistachios)
Method:
1. Sauté carrots in ghee for 5-7 mins.
2. Add milk, cook until thickened.
3. Stir in sugar and khoya; cook to thicken. Add cardamom and nuts. Let cool.
For Ice Cream
Ingredients:
– 250ml whipping cream
– 50g condensed milk
– 1 tsp vanilla essence
Method:
1. Whip cream to soft peaks.
2. Mix condensed milk and vanilla, then fold in cream and halwa.
3. Freeze for 4-6 hours.
For Brandy Snaps
Ingredients:
– 60g flour, golden syrup, brown sugar, butter
– 1 tsp ginger juice
– 1 tsp brandy
Method:
1. Melt syrup, sugar, and butter; add flour, ginger, and brandy.
2. Bake small spoonfuls on a sheet at 175°C for 8-10 mins.
3. Shape snaps around molds while warm.
To Serve: Scoop ice cream into brandy snaps and garnish with mint.
Coconut Raffaello recipe by Chef Shilpa Kumar, Akshayakalpa Organic
Ingredients:
– 200g desiccated coconut (50g for rolling)
– 100g milk powder
– 150g soft dates, deseeded
– 5g roasted fox nuts (makhana)
– 1 tbsp virgin coconut oil
– 8-10 saffron strands
– A pinch of cardamom powder
Method
1. Blend dates into a paste. Mix with coconut, milk powder, saffron, and cardamom until a dough forms.
2. Grease palms, flatten small dough balls, place a fox nut in the center, and roll into balls.
3. Coat with desiccated coconut. Serve or store.
Bread Cheese Lollipop recipe by Harvest Gold
Ingredients:
- 4-5 slices of Harvest Gold Hi Fiber Atta bread
- ¼ cup grated cheese
- 2-3 cheese slices
- ¼ cup tomato ketchup
- ½ cup finely chopped Capsicum
Instructions:
- Cut the Harvest Gold Hi Fiber Atta bread slices into thin sheets
- Cut the cheese slices into thin pieces
- Align the cheese slices on top of the bread slices
- Roll the bread and insert a stick to create a lollipop-shape
- Layer it with tomato sauce
- Add grated cheese and capsicum on top of each lollipop
- Now air fry the Bread Cheese Lollipop
- Serve hot with ketchup or any dip you like

– 1 cup soaked quinoa, 1 tbsp ghee, 2.5 cups milk, ½ tsp cardamom, stevia, saffron
Method:
1. Roast quinoa with ghee; cook with milk and water until soft.
