The rich and hearty Kootu Curry features a vegetable medley cooked in brown coconut gravy, while Avial delights with its creamy and spicy combination of vegetables simmered in coconut, yoghurt, and chilli paste. Olan, a subtle dish of white pumpkin and black-eyed beans simmered in coconut milk and chilli, contrasts beautifully with the tangy and creamy Kalan, made from yam and raw banana cooked in coconut and yoghurt. Erissery, a comforting dish of red pumpkin and green gram dal in coconut curry, and Parupu Thalichathu, a simple yet flavorful lentil curry, continue the journey through Kerala’s culinary heritage. The sweet and tangy Kaitachakka Pachadi, featuring pineapple cooked with coconut and spices, and the tangy Thakkali Rasam, a tempered lentil, tomato, and tamarind extract, add layers of flavour to the feast.
